It doesn’t get much easier than this no-cook Berries and Cream dessert. This two-ingredient recipe comes together fast and will satisfy your sweet tooth immediately.
File this easy dessert under “no-recipe recipe.” Today’s post is less of a recipe, and more of a simple reminder that this delicious dessert exists, you can have it under two minutes, and you should be making it all. the. time.
This is simply a combination of store bought vanilla ice cream mixed and mashed with frozen berries (see what I meant about not needing a recipe?). It’s kind of like a thick milkshake that you eat with a spoon. Don’t worry, you won’t have to get out the blender.
How To Make Berries and Cream:
You only need two ingredients for this “recipe.” You can add other mix-ins and flavorings, but it really is perfect as-is. Stock your freezer with these two ingredients, and you can whip it up anytime you choose.
Assembly: Thaw your berries just a bit. They should still be partially frozen, but beginning to get soft and juicy (I stick mine in the microwave for about 20 seconds). Add the ice cream and mash/stir the juicy berries into the ice cream. Adjust the amount of berries and ice cream to suit your taste.
This is perfect for those times you’re craving something sweet but not wanting to turn on the oven (practically every summer evening).
TIP: I often thaw the berries in individual mugs, then add the ice cream, mix it, and consume it straight from the mug.
LIGHTER OPTION: Go heavier on the berries and lighter on the ice cream.

- Thaw the berries just a bit. I do this by placing them in a mug and microwaving them for about 15 seconds. They should still be partially frozen, but juicy and easy to mash.Add the ice cream and stir and mash until the berry juices are running through the ice cream and any large chunks of berries are broken up. Eat immediately.
Notes
- You can also add frozen sweet cherries along with the berries.
